Hatay Cracked Crushed Olive
Unlike other olives, the broken mini olives grown in Hatay have a fleshy structure with smaller amount of olive and small seeds. We carefully collect the mini olives in November, which is their most oily and mature period. With traditional methods, we broke them one by one on the stone with a wooden mallet and kept in water for days. Afterwards we pickled it and fill it in jars
